Chef Albrich was born and raised in a rich culinary heritage in the Tyrolean Alps in Austria, where the autumn “Wild Game Weeks” (locally known as Wildwochen) are a highly anticipated culinary tradition celebrating fresh, locally hunted mountain game like venison, chamois, hirsch and wild boar. These themed weeks take place throughout North (Austria) and South Tyrol (Italy) from mid-September through late November. Chef Albrich invites you to experience this time-honored tradition firsthand. From mid-September through December, he is curating private dining experiences in the High Country of NC centered around fresh, sustainably hunted mountain game like venison, elk, bison and wild boar, beautifully paired with other local ingredients.

It is said that Kaiserschmarrn was created for Emperor Franz Joseph I of Austria. The name literally translates to “Emperor’s Mess,” which is exactly what this rustic, torn pancake is. A sweet dish of Austrian origins, popular in Trentino and South Tyrol
