LOBSTER MARGARITA
 
INGREDIENTS
1 medium size cooked lobster
1/2 medium orange
1/2 lime
1 mandarin for juice
1 mandarin in segments
1 tbsp seasoned rice vinegar
1 tbsp Mirin
3-4 tbsp Tequila
Cayenne pepper
Mediterranean sea salt
1/2 papaya
1/3 small red onion
6 cilantro branches
2 green onions
1 red chilli pepper
1/4 California avocado
About 12 arugula leaves
 

PREPARATION:

Salad:

1/2 papaya diced
1/3 red onion finely chopped
The leaves of 5-6 cilantro branches
6-8 mandarin segments
The green part of a green onion cut in thin rings
1/2 of a red chili pepper, thinly chopped (or to taste)
Mix above ingredients and pour most of the vinaigrette on it, and set aside


Tequila Vinaigrette:
The juice of 1/2 medium orange
The juice of 1/2 lime
The juice of 1 mandarin
1 tbsp seasoned rice vinegar
1 tbsp Mirin
3-4 tbsp your favorite Tequila
Cayenne pepper to taste
A pinch of salt
Mix above ingredients and set aside


Salt the rim of a margarita glass.
Take the meat of a medium lobster and cut in medallions or leave whole. Place some arugula leaves at the bottom of the margarita glass.  Spoon in the mixture of salad ingredients above.  Add several lobster medallions, or one larger piece.  Pour the rest of the vinaigrette over the lobster medallions.  Decorate with a green onion to look like a tree and a 1/4 very thin sliced California avocado.
